Italian cuisine is rooted in a combination of tradition and place. The tradition is hundreds of years of processes and techniques worked out and passed down from generation to generation. The delicate, deceptively simple act of making pasta by hand. The different shapes and recipes of the dough to create the perfect match with each accompaniment. The sauces and accompaniments that have been practiced and perfected. These traditions and techniques solidify the unique character that is Italian “cuisine”, but place is the dominant partner in this combination.

Place is very important in Italian culture. There is a strong embrace of the land and history of the particular region where one comes from. Even though a narrow river separates Lombardia from Emilia-Romagna, the residents of each look on one another as less fortunate cuisines. It is more pride than prejudice. There is a uniqueness to each region that defines ones view of the world. Even though Italians exist and in most ways embrace the modern global nature of the world, and live with it’s consequences; mass production and supermarket culture, there is still a strong tie to the local. In the context of food, this translates to a desire and focus on the freshest ingredients, seasonal, and familiar to where and in a sense, what one is.

These concepts form the foundation that Fedé is built on. Fedé is a full service Italian restaurant. The concept is simple: everything hand made from the best, most locally accessible ingredients available. Whether it’s a quick plate of pasta or a salad on a lunch break, a glass of wine and a few bites after an afternoon of shopping and sightseeing, or a full dinner with friends on a random Wednesday evening. Welcoming, warm, inclusive, and sincere is our intention. Fedé will be a neighborhood restaurant, for the neighborhood we are in, for Astoria, for the entire North Coast, and for everyone visiting our community. By pursuing relationships with local farmers, fishermen, and purveyors we will put our money where everyone’s mouth is. A place of pride where one’s uncle may have caught the fish served at the table, or a friend grew the swiss chard stewed with local butter and sharp parmesan. Fedé is a place to enjoy the bounty and comradery of our community, and to play host and brag about our unique place to visitors as well.

Fedé is a partnership between wife and husband, Faith Davenport and Sean Hammond. Between us, we have over fifty years experience in the restaurant hospitality service industry.

Through the course of his career, Sean discovered a passion for Italian cooking. The history and technique, the simple elegance. While working as Chef in an Italian restaurant, Faith and Sean had the opportunity to travel to Italy, to experience the culture and cuisine. They both fell in love with the aspects of the food and service that embody the tradition of Italian dining. Since then, they have returned several times and have immersed themselves in that peculiar thing, the Italian restaurant. From this comes Fedé.
